At my workspace in Amsterdam Noord, I ferment local and organic fruit and vegetables in wooden barrels and ceramic crocks.
I make fermented pickles, condiments and drinks, nothing is pasteurised. As produce comes from the fields the offer constantly changes, some more experimental or labor intensive batches are very small.
I care about the people and nature that provide me with produce and I do my best to act on that, trying to reduce pollution and resource consumption as much as possible and developing healthy relationships with everyone involved.

I use almost exclusively local and organic produce, except for example citrus from small growers in Italy and growers who are not certified organic but care for the earth and their produce.
